  • 2 cups cooked lime rice
  • 2 cups shredded rotisserie chicken
  • 1 cup black beans drained and rinsed
  • 1 cup corn kernels
  • 1 avocado diced
  • 1 cup cherry tomatoes halved
  • 1/2 cup red onion thinly sliced
  • 1/2 cup shredded cheese
  • 1/4 cup chopped cilantro
  • 1 lime cut into wedges

Preparation

  • Cook the rice according to package instructions. Once done, fluff with a fork and stir in lime juice, lime zest, and chopped cilantro. Set aside.
  • Shred the rotisserie chicken into bite-sized pieces. Drain and rinse the black beans. Dice the avocado and halve the cherry tomatoes.
  • Divide the lime rice into serving bowls. Top with shredded chicken, black beans, corn, avocado, cherry tomatoes, and red onion.
  • Sprinkle shredded cheese over each bowl, then add a generous amount of chopped cilantro on top.
  • Serve each bowl with a lime wedge for squeezing over the top before eating.
  • Serve immediately while ingredients are fresh. Offer additional lime wedges and hot sauce on the side if desired.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days. For best quality, store ingredients separately and assemble just before serving.
