  • 1 pound pasta penne or fusilli
  • 2 tablespoons olive oil
  • 1 onion finely chopped
  • 3 cloves garlic minced
  • 1 can 28 ounces crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves for garnish

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat. Add chopped onion and minced garlic, sauté until onion is translucent.

Cooking

  • Add crushed tomatoes, oregano, and basil to the pot. Stir and let simmer for 5 minutes.
  • Add pasta to the pot, stir to coat with sauce. Add enough water to cover the pasta, bring to a boil, then reduce to a simmer.
  • Cook, stirring occasionally, until pasta is al dente and most of the liquid is absorbed, about 15-20 minutes.

Serving

  • Stir in Parmesan cheese until melted. Season with salt and pepper. Garnish with fresh basil before serving.

Storage

  • Allow pasta to cool completely, then store in an airtight container in the refrigerator for up to 4 days.
