  • 4 ears of fresh corn husked
  • 1 cup cherry tomatoes halved
  • 1 red bell pepper diced
  • 1/2 red onion finely chopped
  • 1/4 cup fresh basil leaves torn

Dressing

  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • Salt and pepper to taste

Preparation

  • Preheat your grill to medium-high heat. Ensure the grates are clean and lightly oiled to prevent sticking.
  • Brush the corn with olive oil and season with salt and pepper. Grill the corn, turning occasionally, until the kernels are tender and charred, about 10 minutes. Remove from grill and let cool.
  • Once the corn is cool enough to handle, use a sharp knife to cut the kernels off the cob. Be sure to hold the cob upright in a large bowl to catch all the kernels.
  • Dice the red bell pepper, halve the cherry tomatoes, and finely chop the red onion. Tear the basil leaves into small pieces.
  • In a large mixing bowl, combine the grilled corn kernels, cherry tomatoes, bell pepper, red onion, and basil leaves. Toss to combine.
  • Drizzle the salad with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss everything together until well combined.
  • Transfer the salad to a serving platter. Garnish with additional basil leaves if desired. Serve immediately or refrigerate until ready to serve.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. The flavors will continue to develop, making it even more delicious the next day.
