Equipment

  • 1 Baking Sheet lined with parchment paper
  • 1 Mixing Bowl large
  • 1 oven

Ingredients

Pizza Dough

  • 2 cups all-purpose flour
  • 1 packet 2 1/4 tsp active dry yeast
  • 3/4 cup warm water
  • 1 tbsp olive oil
  • 1 tsp salt

Toppings

  • 2 cups Brussels sprouts trimmed and halved
  • 2 tbsp olive oil
  • 2 cloves garlic minced
  • 1 cup mozzarella cheese shredded
  • 1/4 cup Parmesan cheese grated
  • 1/2 tsp red pepper flakes

Instructions

Preparation

  • In a large mixing bowl, combine the flour, yeast, and salt. Add warm water and olive oil, then mix until a dough forms. Knead the dough on a floured surface until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place for about an hour or until doubled in size.
  • Preheat the oven to 400°F. Toss the Brussels sprouts with olive oil, minced garlic, salt, and pepper. Spread them out on a baking sheet and roast for 20 minutes, or until they're golden brown and crispy.

Serving

  • Preheat the oven to 475°F. Roll out the risen dough on a floured surface and transfer to a parchment-lined baking sheet. Top with mozzarella cheese, roasted Brussels sprouts, Parmesan, and red pepper flakes. Bake for 12-15 minutes or until the crust is golden and the cheese is melted and bubbly.

Storage

  • Allow the pizza to cool completely before storing. Wrap slices individually in plastic wrap or store in an airtight container. Refrigerate for up to 3 days.
