  • 8 oz linguine or fettuccine
  • 1 lb shrimp peeled and deveined
  • 1 cup fresh or frozen corn
  • 1 cup cherry tomatoes halved
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Preparation

  • Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, according to package instructions. Drain and set aside.
  • While the pasta is cooking, season the shrimp with salt, pepper, and a pinch of garlic powder. Heat a large skillet over medium-high heat, add olive oil, and cook shrimp for 2-3 minutes per side until pink and opaque. Remove from skillet and set aside.
  • In the same skillet, add corn and cook for 5-7 minutes until it begins to caramelize. Add garlic and cherry tomatoes, cooking for another 2-3 minutes until the tomatoes start to soften.

Make the Sauce

  • Reduce heat to medium and pour in the heavy cream. Stir to combine with the corn and tomatoes. Let simmer for 5 minutes.
  • Add the cooked pasta to the skillet, tossing to coat in the sauce. Return the shrimp to the skillet, along with Parmesan cheese and fresh basil. Stir until everything is well combined.

Serving

  • Taste and adjust seasoning if necessary. Serve immediately, garnished with additional basil and Parmesan if desired.

Storage

  • Transfer any leftovers to an airtight container and refrigerate for up to 3 days. Reheat gently on the stove with a splash of cream if needed.
