  • 1 cup cottage cheese
  • 2 tbsp olive oil
  • 3 cloves garlic minced
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions
 

Preparation

  • Heat olive oil in a pan over medium heat. Add minced garlic and sauté until fragrant, taking care not to let it burn.
  • Bring a pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Drain and reserve a cup of pasta water.

Make the Creamy Sauce

  • In a blender, combine cottage cheese, sautéed garlic, and Parmesan cheese. Blend until smooth.
  • Return the pasta to the pot, pour over the creamy sauce, and add reserved pasta water as needed to achieve desired consistency. Season with salt and pepper.
  • Toss the pasta until well coated. Garnish with fresh basil before serving.

Serving

  • Serve the pasta hot, paired with a simple salad or garlic bread for a complete meal.
