Equipment

  • 1 food processor
  • 1 Large skillet
  • 1 Large pot

Ingredients

Pesto Sauce

  • 2 cups fresh basil leaves
  • 1/2 cup pine nuts
  • 3 cloves garlic
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup olive oil

Pasta and Cream Sauce

  • 1 pound pasta of choice
  • 1 cup heavy cream
  • Salt and pepper to taste

Instructions

Prepare the Pesto

  • In a food processor, combine basil, pine nuts, garlic, and Parmesan cheese. Pulse until finely chopped. With the motor running, slowly add the olive oil until the mixture is smooth. Season with salt and pepper to taste.

Cook the Pasta

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package directions until al dente. Reserve 1 cup of pasta water, then drain the pasta.

Combine and Serve

  • In a large skillet over medium heat, combine the prepared pesto and heavy cream. Stir well to combine and bring to a gentle simmer.
  • Add the cooked pasta to the skillet and toss to coat in the creamy pesto sauce. Add reserved pasta water as needed to achieve the desired consistency. Adjust seasoning with salt and pepper.
  • Divide the pasta among bowls and garnish with additional Parmesan cheese if desired. Serve immediately.

Storage

  • Transfer any leftovers to an airtight container and refrigerate for up to 3 days. Reheat gently to serve.

Notes

Pro Tips: Use fresh basil for the best flavor. Toast pine nuts lightly to enhance flavor. Adjust cream amount to preference for desired creaminess.
Ingredient Substitutions: Walnuts can replace pine nuts. Pecorino Romano is a good Parmesan substitute.
How to Serve: Pair with grilled chicken or shrimp, and a green salad. A crisp white wine complements this dish.
Storage & Freshness: Best eaten fresh but can be stored in the fridge for up to 3 days.
Make-Ahead Tips: Pesto can be prepared in advance and stored in the fridge for up to a week.
