  • 1 Mixing Bowl large, for salad assembly
  • 1 Whisk for making dressing

Ingredients

Pasta

  • 1 1/2 cups orzo pasta

Lemon Dressing

  • 1/3 cup fresh lemon juice
  • 1/4 cup olive oil
  • 2 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Salad

  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1/4 cup red onion thinly sliced
  • 1/2 cup feta cheese crumbled (optional)
  • 1/4 cup fresh basil chopped

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Add the orzo pasta and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.
  • In a small bowl, whisk together fresh lemon juice, olive oil, minced garlic, salt, and black pepper. Adjust seasoning to taste.
  • In a large mixing bowl, combine the cooked orzo, cherry tomatoes, cucumbers, and red onions. Pour the lemon dressing over the salad and toss gently to combine.
  • If desired, fold in the crumbled feta cheese and fresh basil. Toss lightly to distribute evenly.
  • Cover the salad and refrigerate for at least 30 minutes before serving to allow the flavors to meld together.

Serving

  • Serve the chilled salad in individual bowls or on a platter. Garnish with additional fresh basil if desired.

Storage

  • Store any leftover salad in an airtight container in the refrigerator for up to 3 days. Stir before serving to redistribute the dressing.
