Ingredients
  

Dough

  • 2 1/4 cups all-purpose flour
  • 1 packet active dry yeast
  • 1 tsp salt
  • 1 tbsp olive oil
  • 3/4 cup warm water

Toppings

  • 1/2 cup goat cheese crumbled
  • 1 zucchini thinly sliced
  • 1/4 cup fresh basil leaves
  • 2 tbsp olive oil
  • Salt and pepper to taste

Preparation

  • In a large mixing bowl, combine the flour, yeast, and salt. Add the olive oil and warm water, then mix until a dough forms. Knead on a floured surface for about 10 minutes until smooth and elastic. Let it rise in a greased bowl, covered, until doubled in size, about 1 hour.
  • While the dough is rising, slice the zucchini thinly and crumble the goat cheese. Set aside.
  • Preheat your oven to 475°F. If using a pizza stone, place it in the oven to heat up.
  • Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness. Transfer to a pizza peel or a baking sheet lined with parchment paper.
  • Brush the dough with olive oil. Evenly distribute the crumbled goat cheese and zucchini slices over the surface. Season with salt and pepper.
  • Transfer the pizza to the oven and bake for about 15 minutes, or until the crust is golden and the cheese is bubbly. If using a stone, transfer the pizza using a peel for best results.
  • After removing the pizza from the oven, immediately scatter fresh basil leaves over the top. Allow the pizza to cool slightly before slicing.
