Preparation

  • Drain the ricotta cheese to remove excess moisture. Transfer it to a large mixing bowl.

  • Gently fold in the diced tomatoes into the whipped ricotta mixture.
  • Drizzle the olive oil over the mixture and continue to fold until fully incorporated.
  • Add salt and black pepper to taste, mixing thoroughly.
  • Spoon the dip into a serving bowl, smoothing the top with the back of the spoon.
  • Sprinkle chopped basil and Parmesan cheese over the top before serving.
  • Serve immediately with a selection of breads and vegetables.
