Ingredients
  

For the Gnocchi Skillet

  • 16 oz potato gnocchi
  • 1 tbsp olive oil
  • 1 onion diced
  • 2 garlic cloves minced
  • 3/4 cup heavy cream or half and half
  • 1 zucchini sliced
  • 3 cups fresh spinach
  • 1/3 cup grated Parmesan cheese
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions
 

  • Sauté onion and garlic in olive oil until softened.
  • Add gnocchi and cook until lightly golden.
  • Stir in cream, vegetables, and simmer gently.
  • Add cheese, season, and serve warm.

Notes

Add a splash of milk when reheating to keep the sauce smooth. Best enjoyed within 2 to 3 days.
