Ingredients
  

Turkey Meatballs

  • 1 lb ground turkey
  • 0.5 cup breadcrumbs
  • 1 egg
  • 2 cloves garlic, minced
  • 1 tsp Italian seasoning
  • 0.75 tsp salt
  • 0.5 tsp black pepper

Peppers and Sauce

  • 1 tbsp olive oil
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 yellow onion, sliced
  • 2 tbsp tomato paste
  • 1 cup crushed tomatoes
  • 0.75 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Instructions
 

  • In a bowl, gently mix ground turkey, breadcrumbs, egg, garlic, Italian seasoning, salt, and pepper until just combined.
  • Form the mixture into evenly sized meatballs.
  • Heat olive oil in a large skillet over medium heat. Add meatballs and brown on all sides.
  • Remove meatballs from the skillet and set aside.
  • Add onion and bell peppers to the skillet and cook until softened.
  • Stir in tomato paste and cook briefly.
  • Add crushed tomatoes, seasoning, salt, and pepper and stir to combine.
  • Return meatballs to the skillet, reduce heat, and simmer until cooked through.

Notes

Serve with pasta, rice, or crusty bread. Store leftovers in the refrigerator for up to four days.
