Ingredients
  

For the Roasted Vegetables

  • 2 cups broccoli florets
  • 2 carrots sliced
  • 1 red bell pepper chopped
  • 1 zucchini sliced
  • 1 red onion sliced
  • 2 tbsp olive oil

For the Rice

  • 1 cup white or brown rice
  • 2 cups water or vegetable broth

Instructions
 

  • Toss vegetables with oil and seasonings and roast until tender.
  • Cook rice according to package instructions.
  • Assemble bowls with rice and roasted vegetables and finish with herbs.

Notes

Add lemon and fresh herbs just before serving for best flavor. Store leftovers in the refrigerator for up to 4 days.
