  • 1 cup cherry tomatoes halved
  • 8 oz fresh mozzarella balls bocconcini
  • 1/4 cup fresh basil leaves chopped
  • 2 tbsp olive oil
  • 2 tbsp balsamic glaze
  • Salt and pepper to taste

Preparation

  • Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process. Set aside to cool completely.
  • In a large mixing bowl, combine the cherry tomatoes, mozzarella balls, and fresh basil. Drizzle with olive oil and balsamic glaze. Season with salt and pepper, then toss gently to combine.
  • Add the cooled tortellini to the tomato and mozzarella mixture. Gently toss to ensure all ingredients are well coated with the dressing.
  • Transfer the salad to a serving bowl, cover, and refrigerate for at least 30 minutes before serving. This allows the flavors to meld together.
  • Remove the salad from the refrigerator and give it a gentle toss. Garnish with additional basil leaves and a drizzle of balsamic glaze before serving.
