Equipment

  • 1 9-inch pie dish
  • 1 Mixing Bowl large
  • 1 pastry cutter

Ingredients

Pie Filling

  • 5 cups fresh strawberries hulled and sliced
  • 3/4 cup granulated sugar
  • 3 tablespoons cornstarch
  • 1 tablespoon lemon juice

Crumb Topping

  • 1 cup all-purpose flour
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter chilled and diced

Pie Crust

  • 1 9- inch pie crust homemade or store-bought

Instructions

Preparation

  • Preheat your oven to 375°F (190°C) to prepare for baking the pie.
  • Roll out the pie crust and fit it into a 9-inch pie dish. Trim any excess dough and crimp the edges.
  • In a large mixing bowl, combine sliced strawberries, granulated sugar, cornstarch, and lemon juice. Toss gently to coat the strawberries evenly.
  • In another bowl, mix together flour, brown sugar, and granulated sugar. Cut in the chilled butter using a pastry cutter or your fingers until the mixture resembles coarse crumbs.
  • Pour the strawberry mixture into the prepared pie crust, spreading it evenly. Sprinkle the crumb topping over the strawberries, covering the filling completely.
  • Place the pie on the middle rack of your preheated oven. Bake for 45 to 50 minutes, or until the topping is golden brown and the filling is bubbling.
  • Remove the pie from the oven and let it cool on a wire rack for at least 2 hours to allow the filling to set.
  • Slice the pie into wedges and serve with a dollop of whipped cream or a scoop of vanilla ice cream, if desired.
  • Store any leftover pie covered in the refrigerator for up to 3 days. Enjoy chilled or gently warmed.
