Preparation

  • Wash the strawberries under cold water, hull them, and cut into quarters. If using frozen strawberries, allow them to thaw slightly before use.
  • Combine strawberries, Greek yogurt, honey, vanilla extract, and lemon juice (if using) in a blender. Blend until the mixture is smooth and creamy.
  • Taste the mixture and adjust the sweetness as needed by adding more honey or sweetener. Blend again to combine.

Freezing

  • Transfer the mixture to an ice cream maker and churn according to the manufacturer's instructions until it reaches a soft-serve consistency.
  • Spoon the churned yogurt into a freezer-safe container, smoothing the top with a spatula.
  • Cover the container with a lid or plastic wrap and freeze for at least 2 hours or until the yogurt is firm enough to scoop.

Serving

  • Remove the frozen yogurt from the freezer and let it sit at room temperature for 5 minutes before scooping. Serve in bowls or cones with your choice of toppings.
