  • 1 lb shrimp, peeled and deveined
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup chicken broth
  • 1 tablespoon Worcestershire sauce
  • Salt and pepper to taste
  • Chopped green onions for garnish

Preparation

  • Season the shrimp with Cajun seasoning and set aside.
  • In a large skillet, heat the olive oil over medium heat.

Cooking

  • Add the onion and bell pepper, sautéing until softened, about 5 minutes.
  • Stir in the garlic and cook for 1 minute.
  • Add the diced tomatoes, chicken broth, and Worcestershire sauce. Bring to a simmer.
  • Add the shrimp and cook until they turn pink and opaque, about 3-4 minutes.
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions before serving.

Notes

Swap shrimp for scallops or chicken for variations. Reduce Cajun seasoning for less spice. Add greens like kale or spinach for extra texture. Use homemade chicken broth for richer flavor. Serve over rice or with crusty bread to enjoy the sauce.
