Crispy Rice

  • 2 cups cooked sushi rice
  • 1 tablespoon sesame oil

  • 1 cucumber sliced
  • 1 avocado sliced
  • 2 tablespoons mayonnaise
  • 1 tablespoon sriracha

Instructions
 

Preparation

  • Combine soy sauce, ginger, and sriracha in a bowl. Add salmon fillets and coat evenly. Let marinate for 20 minutes.
  • Cook sushi rice according to package instructions. Spread on a baking sheet to cool slightly.
  • In a frying pan, heat sesame oil over medium-high heat. Add rice in batches, pressing down to form a crust, and cook until golden and crispy.

Assembly

  • Mix mayonnaise with sriracha in a small bowl. Adjust the amount of sriracha to taste.
  • Heat a non-stick pan over medium heat. Cook salmon for 4-5 minutes on each side until cooked through.
  • Layer crispy rice in a bowl, add slices of salmon, cucumber, and avocado. Drizzle with sriracha mayo.

Serving
