  • 1 pound shrimp peeled and deveined
  • 2 cups corn kernels fresh or frozen

  • 2 tablespoons Cajun seasoning

  • 1 onion chopped
  • 1 bell pepper chopped
  • 2 cloves garlic minced
  • 2 tablespoons butter

Preparation

  • Clean and devein the shrimp. Pat dry with paper towels and season with Cajun seasoning.
  • Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente. Drain and set aside.
  • In a large skillet, melt butter over medium heat. Add corn and sauté until slightly charred, about 5 minutes. Remove from skillet and set aside.
  • In the same skillet, add olive oil and sauté garlic, onion, and bell pepper until soft, about 5 minutes.
  • Add shrimp to the skillet and cook until pink and opaque, about 3-4 minutes per side. Remove shrimp and set aside.
  • Pour the heavy cream into the skillet and bring to a gentle simmer. Allow to thicken slightly, about 3 minutes.
  • Return the corn, shrimp, and pasta to the skillet. Toss everything together until well combined and heated through.
  • Garnish with parsley or green onions and serve immediately.
