Equipment

  • 1 Large pot for cooking spaghetti
  • 1 large bowl for mixing salad
  • 1 Whisk for mixing dressing

Ingredients

Salad

  • 12 oz spaghetti
  • 1 cup cherry tomatoes halved
  • 1 cup cucumber diced
  • 1 red bell pepper diced
  • 1/2 red onion thinly sliced

Dressing

  • 1/4 cup olive oil
  • 2 tbsp red wine vinegar
  • 2 cloves garlic minced
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Instructions

Preparation

  • Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and rinse under cold water to stop cooking.
  • In a small bowl, whisk together olive oil, red wine vinegar, minced garlic, and Italian seasoning. Season with salt and pepper to taste.
  • In a large bowl, combine the cooled spaghetti, cherry tomatoes, cucumber, red bell pepper, and red onion. Pour the dressing over the salad and toss to coat evenly.
  • Cover the salad and refrigerate for at least 1 hour to allow the flavors to meld and for the salad to chill thoroughly.

Serving

  • Once chilled, toss the salad again before serving to redistribute the dressing. Serve as a refreshing side dish or a light main meal.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Stir well before serving again.
