  • 2 ripe peaches halved and pitted
  • 2 cups fresh arugula
  • 8 oz burrata cheese
  • 2 tbsp olive oil divided

For Dressing

  • 2 tbsp balsamic glaze
  • Salt and pepper to taste

Preparation

  • Preheat the grill or grill pan to medium-high heat. Ensure it's clean and lightly oiled to prevent sticking.
  • Brush the cut sides of the peaches with a tablespoon of olive oil. Place them cut-side down on the grill and cook for 3-4 minutes until grill marks appear and the peaches are slightly softened.
  • While the peaches are grilling, wash and dry the arugula. Arrange it on a large serving platter as a bed for the salad.
  • Gently tear the burrata cheese into smaller pieces and distribute them over the arugula.
  • Once the peaches are grilled, place them on top of the arugula and burrata.
  • Drizzle the remaining olive oil and balsamic glaze over the entire salad. Season with salt and pepper to taste.
  • The salad is best served fresh, while the peaches are still warm.
  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. Note that the arugula may wilt slightly.
  • You can grill the peaches a day in advance and store them in the refrigerator. Assemble the salad just before serving for the best texture.
