Ingredients
  

Potato Salad

  • 2 lbs small red or Yukon Gold potatoes halved
  • 2 tbsp olive oil
  • Salt and pepper to taste

Lemon Herb Dressing

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 tbsp Dijon mustard
  • 1 tsp honey
  • 2 cloves garlic minced
  • 1 tsp smoked paprika

Garnish

  • 1/4 cup fresh parsley chopped
  • 2 tbsp fresh dill chopped

Instructions
 

Preparation

  • Wash the potatoes thoroughly and slice them in half. Pat dry with a clean towel.
  • In a large bowl, toss the potato halves with olive oil, salt, and pepper until evenly coated.

Grilling

  • Preheat your grill to medium-high heat, around 400°F.
  • Place the potatoes cut-side down on the grill. Cook for about 15-20 minutes, turning occasionally, until they are tender and have grill marks.

Dressing and Assembly

  • In a small bowl, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, and smoked paprika.
  • Transfer the grilled potatoes to a large bowl. Pour the lemon herb dressing over them and toss gently to coat.
  • Sprinkle chopped parsley and dill over the salad. Toss once more to distribute the herbs evenly.

Serving and Storage
