  • 1 can 15 oz chickpeas, drained and rinsed
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/4 cup Kalamata olives pitted and sliced
  • 1/4 cup fresh parsley chopped
  • 1/4 cup fresh mint chopped

Dressing

  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 garlic clove minced
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large mixing bowl, use a fork or potato masher to gently smash the chickpeas. Leave some whole for texture.
  • Add cherry tomatoes, cucumber, red onion, and Kalamata olives to the bowl with the chickpeas. Stir to combine.
  • In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper.
  • Pour the dressing over the chickpea mixture. Add chopped parsley and mint, and toss everything together until well coated.

Serving

  • Transfer the salad to a serving bowl. Serve immediately or refrigerate for an hour to let the flavors meld.

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Stir before serving again.
