Ingredients
  

Cake Batter

  • 3 eggs room temperature
  • 3/4 cup granulated sugar
  • 1/2 cup olive oil or neutral oil
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 1 tablespoon lemon or orange zest
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt

Instructions
 

  • Preheat oven to 350 degrees Fahrenheit and line a cake pan with parchment paper.
  • Whisk eggs and sugar until pale and slightly thickened.
  • Add oil, milk, vanilla, and zest and whisk until combined.
  • Mix flour, baking powder, and salt in a separate bowl.
  • Gently fold dry ingredients into wet mixture.
  • Pour batter into pan and smooth the top.
  • Bake for 35 to 40 minutes until set and lightly golden.
  • Cool briefly, then transfer to rack to cool completely.
