Ingredients
  

Broth and Noodles

  • 4 cups chicken or vegetable broth
  • 8 oz ramen noodles Cook according to package instructions.

Main Ingredients

  • 1 cup pre-cooked shrimp, thawed Add in the last few minutes of cooking.
  • 1 cup snap peas, trimmed For a fresh crunch.
  • 1 cup sliced mushrooms
  • 4 green onions, chopped To be used as a topping.

Seasonings

  • 2 tablespoons soy sauce Adjust according to taste.
  • 1 tablespoon sesame oil
  • Salt and pepper to taste

Preparation

  • In a large pot, bring the broth to a simmer over medium heat.
  • Add the ramen noodles and cook according to package instructions, usually 3-4 minutes.
  • Stir in the pre-cooked shrimp, snap peas, and mushrooms; cook for an additional 2-3 minutes until heated through.
  • Stir in the soy sauce and sesame oil, and season with salt and pepper to taste.
  • Remove from heat and serve hot, topped with chopped green onions.

Notes

For a vegetarian version, use tofu instead of shrimp. Feel free to substitute any vegetables you have on hand. Adjust seasoning with lime juice for a zesty twist, or add chili oil for a spicier kick.
