Ingredients
  

Chicken Salad

  • 2 cups rotisserie chicken shredded
  • 1/2 cup mayonnaise
  • 1/4 cup celery finely chopped
  • 1/4 cup red onion finely chopped
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Sandwich Assembly

  • 8 slices of bread
  • Optional: lettuce tomato slices

Instructions
 

Preparation

  • Remove the skin from the rotisserie chicken and shred the meat into bite-sized pieces.
  • In a large mixing bowl, combine shredded chicken, mayonnaise, celery, red onion, Dijon mustard, and lemon juice. Stir well to combine. Season with salt and pepper to taste.
  • Lay out slices of bread. Spoon a generous portion of chicken salad onto half of the slices, spreading evenly.
  • If desired, add lettuce and tomato slices on top of the chicken salad.
  • Top with the remaining slices of bread to form sandwiches. Cut in half if desired.
