  • 12 oz fettuccine pasta
  • 2 large red bell peppers
  • 3 tbsp unsalted butter
  • 2 cloves garlic minced
  • 1 cup heavy cream
  • 1 1/2 cups grated Parmesan cheese
  • Salt and pepper to taste

Preparation

  • Preheat the oven to 450°F. Place the peppers on a baking sheet and roast for 20 minutes, turning occasionally, until the skin is charred. Transfer to a bowl, cover, and let steam for 10 minutes. Peel the skin, remove seeds and stems, then chop.
  • In a large pot, bring salted water to a boil. Add fettuccine and cook according to package instructions until al dente. Drain and set aside.
  • In a large saucepan, melt butter over medium heat. Add garlic and sauté until fragrant. Stir in roasted peppers and cook for 2-3 minutes. Pour in heavy cream and bring to a simmer.
  • Stir in Parmesan cheese and continue to stir until cheese is fully melted and sauce is smooth. Season with salt and pepper to taste.
  • Add the cooked pasta to the sauce and toss to coat evenly. Ensure all pasta is covered with the sauce.
  • Transfer the pasta to serving plates. Garnish with fresh basil and crushed red pepper flakes if desired. Serve immediately.
  • Allow any leftovers to cool completely. Store in an airtight container in the refrigerator for up to 3 days.
  • To reheat, place pasta in a saucepan over medium heat. Add a splash of cream or milk to loosen the sauce, stirring occasionally until heated through.
