Equipment

  • 1 pizza stone optional, for crispier crust
  • 1 Rolling Pin
  • 1 Mixing Bowl large

Ingredients

Dough

  • 2 cups all-purpose flour
  • 1 tablespoon active dry yeast
  • 1 teaspoon salt
  • 1 tablespoon olive oil
  • 1 cup warm water

Toppings

  • 1 cup ricotta cheese
  • Zest of one lemon
  • 1 tablespoon fresh lemon juice
  • 1/4 cup grated Parmesan cheese
  • 1 tablespoon fresh thyme leaves
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

Preparation

  • In a large mixing bowl, combine the flour, yeast, and salt. Add olive oil and warm water, mixing until a dough forms. Knead the dough on a lightly floured surface for 8-10 minutes until smooth. Let it rest for 30 minutes until doubled in size.
  • Preheat your oven to 475°F. If using a pizza stone, place it in the oven to heat up.
  • In a small bowl, mix ricotta cheese, lemon zest, lemon juice, minced garlic, salt, and pepper until well combined.
  • Roll the dough into a 12-inch circle on a lightly floured surface. Transfer it to a pizza stone or baking sheet.
  • Spread the ricotta mixture evenly over the rolled-out dough. Sprinkle with Parmesan cheese and fresh thyme leaves.

Serving

  • Bake in the preheated oven for 12-15 minutes or until the crust is golden brown and the cheese is bubbly. Remove from the oven and let it cool slightly.
  • Slice the pizza into 8 pieces and serve warm. Enjoy the fresh flavors with a side salad or a refreshing drink.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
