Fried Rice

cooked rice
cold and preferably day old

butter

tbsp
neutral oil

garlic
finely minced

large eggs
lightly beaten

soy sauce
salt
to taste
black pepper
to taste
For Finishing
2
green onions
thinly sliced
Instructions
Melt butter and oil in a wide skillet over medium high heat.
Add garlic and cook briefly until fragrant.
Scramble the eggs until just set.
Add rice and spread into an even layer. Let cook undisturbed.
Stir in soy sauce, season, and continue cooking until golden.
Finish with green onions and serve.
