Ingredients
  

Base

  • 2 cups rolled oats
  • 2 cups unsweetened almond milk
  • 2 tbsp honey or maple syrup

Peach Layer

  • 2 cups diced peaches fresh or frozen
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg

Optional Add-ins

  • 1 tbsp chia seeds
  • 1/4 cup chopped pecans

Instructions
 

Preparation

  • In a large mixing bowl, combine rolled oats, almond milk, and honey or maple syrup. Stir until well mixed and set aside.
  • In each mason jar, add a layer of the oats mixture, followed by a layer of diced peaches. Sprinkle a pinch of cinnamon and nutmeg over the peaches.
  • Continue to alternate layers of oats and peaches, seasoning each peach layer with cinnamon and nutmeg, until the jars are filled.
  • Seal the jars with lids and place them in the refrigerator to chill overnight, or for at least 6 hours.

Serving

  • In the morning, remove the jars from the refrigerator. Stir the contents gently before serving. Enjoy as is or with your favorite toppings.
  • Enhance your overnight oats by adding toppings such as Greek yogurt, granola, or additional fruit slices.
