  • 4 cloves garlic minced
  • 1 cup grated parmesan cheese

Preparation

  • Preheat oven to 400°F. Toss broccoli florets with 2 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 15-20 minutes until tender and slightly browned.
  • In a large pot, heat 1 tbsp olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add pasta and vegetable broth. Bring to a boil, then reduce to a simmer. Cook for 10-12 minutes, stirring occasionally.
  • Once pasta is cooked, stir in roasted broccoli and parmesan cheese. Mix until cheese is melted and everything is well combined. Adjust seasoning as needed.

Serving

  • Divide pasta into bowls. Garnish with fresh basil or parsley if desired. Serve immediately while hot.
