Ingredients
  

Meatballs

  • 1 lb ground chicken
  • 1/4 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic minced
  • 2 tbsp chopped fresh parsley
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Soup Base

  • 1 tbsp olive oil
  • 1 onion diced
  • 2 carrots sliced
  • 2 celery stalks sliced
  • 8 cups chicken broth
  • 2 cups water
  • 1 cup orzo pasta
  • 2 cups fresh spinach chopped
  • 1/4 cup grated Parmesan cheese for serving

Instructions
 

Preparation

  • In a medium bowl, combine ground chicken, breadcrumbs, Parmesan, garlic, parsley, salt, and pepper. Mix until well combined. Form into 1-inch meatballs.
  • Heat olive oil in a large pot over medium heat. Add meatballs and cook until browned on all sides. Remove meatballs from the pot and set aside.
  • In the same pot, add onions, carrots, and celery. Sauté until vegetables are softened, about 5 minutes.
  • Add chicken broth and water to the pot. Bring to a simmer, then stir in orzo pasta and return meatballs to the pot. Cook until orzo is tender and meatballs are cooked through, about 15 minutes.
  • Stir in chopped spinach and cook until wilted, about 2 minutes.
  • Taste and adjust seasoning with salt and pepper as needed.

Serving

  • Ladle soup into bowls and top with additional Parmesan cheese if desired. Serve hot.

Storage

  • Allow soup to cool completely. Store in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop over medium heat until warmed through.
