For the Energy Bites
- 1 cup old fashioned oats
- 3/4 cup almond flour
- 1/2 cup creamy almond butter
- 1/3 cup maple syrup or honey
- 1 tbsp espresso powder or instant coffee
- 2 tbsp unsweetened cocoa powder plus extra for dusting
- 1 tsp vanilla extract
- 1/4 tsp kosher salt
- 2 tbsp mini chocolate chips optional
Optional Boosts
- 1 tbsp chia seeds or ground flaxseed optional
- 1 tbsp vanilla protein powder optional, add 1 to 2 tbsp and adjust texture
In a mixing bowl, stir together oats, almond flour, espresso powder, cocoa powder, and salt.
Add almond butter, maple syrup (or honey), and vanilla. Mix until a thick dough forms.
Fold in optional mini chocolate chips and optional chia or flax.
If mixture is too sticky, add 1 to 2 tablespoons almond flour. If too dry, add 1 tablespoon maple syrup or a small spoonful of almond butter.
Roll into 16 balls. Dust lightly with cocoa powder if desired.
Chill 20 minutes to firm up, then serve. Store refrigerated.
Make ahead: These taste even better after a day in the fridge. Freeze up to 2 months and thaw 10 minutes before eating.
Flavor tip: For a stronger coffee taste, add 1 more teaspoon espresso powder.
