Ingredients
  

For the Crust

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup sugar
  • 1/2 cup unsalted butter melted

For the Filling

  • 1 can 14 oz sweetened condensed milk
  • 3 large egg yolks
  • 1/2 cup key lime juice
  • 1 tbsp lime zest

Preparation

  • Preheat your oven to 350°F (177°C) to prepare for baking the mini key lime pie cups.
  • In a medium bowl, combine graham cracker crumbs, sugar, and melted butter. Mix until the crumbs are evenly coated with butter.
  • Press the graham cracker mixture firmly into the bottom of each muffin cup, creating a solid base for your pie cups.
  • Place the muffin tin in the oven and bake for 5 minutes to set the crust. Remove from oven and let cool slightly.
  • In another bowl, whisk together sweetened condensed milk, egg yolks, lime juice, and lime zest until smooth and well combined.
  • Pour the lime filling evenly into each prepared crust, filling them almost to the top.
  • Return the muffin tin to the oven and bake for 15 minutes, or until the filling is set but still slightly jiggly.
  • Remove the pie cups from the oven and allow them to cool in the tin. Once cool, refrigerate for at least 1 hour before serving.
  • Serve chilled, optionally garnished with whipped cream and a slice of lime for added presentation.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze for up to 1 month.
