  • 1 Electric Mixer
  • 1 Mixing Bowls various sizes
  • 1 Rolling Pin
  • 1 cookie cutter round, 2-inch

Ingredients

Sugar Cookie Base

  • 1 1/2 cups all-purpose flour
  • 1/2 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract

Cream Cheese Topping

  • 8 oz cream cheese softened
  • 1/4 cup powdered sugar
  • 1/2 tsp vanilla extract

Fruit Toppings

  • 1 cup strawberries sliced
  • 1/2 cup blueberries
  • 1/2 cup kiwi sliced
  • 1/4 cup mandarin oranges

Instructions

Prepare the Dough

  • In a medium bowl, whisk together flour, baking powder, and salt.
  • In a large bowl, using an electric mixer, cream the softened butter and granulated sugar until light and fluffy. Add the egg and vanilla extract, beating until combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a dough.

Bake the Cookies

  • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  • On a floured surface, roll out the dough to about 1/4 inch thick. Use a 2-inch round cookie cutter to cut out cookies and place them on the prepared baking sheet.
  • Bake in the preheated oven for 8-10 minutes or until the edges are lightly golden. Cool on the pan for 5 minutes before transferring to a wire rack to cool completely.

Prepare the Topping

  • In a small bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy.

Assemble and Serve

  • Once the cookies are completely cooled, spread a small amount of cream cheese mixture on each cookie.
  • Top each cookie with a variety of sliced fruits, arranging them in a visually pleasing pattern.
  • Serve immediately or refrigerate for up to 2 hours before serving for best freshness.

Storage

  • Store any leftover cookies in an airtight container in the refrigerator for up to 3 days.
