Equipment

  • 1 Large mixing bowl
  • 1 Whisk
  • 1 strainer
  • 1 Cutting Board
  • 1 Knife

Ingredients

Salad Ingredients

  • 8 oz rotini pasta
  • 2 ripe avocados diced
  • 1 pint cherry tomatoes halved
  • 1 cucumber diced
  • 1/4 cup red onion finely chopped
  • 1/2 cup Kalamata olives pitted and halved
  • 1/4 cup crumbled feta cheese
  • 1/4 cup fresh parsley chopped

Dressing

  • 1/4 cup olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic minced
  • Salt and pepper to taste

Instructions

Preparation

  • Cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process and cool the pasta.
  • Dice the avocados, halve the cherry tomatoes, and chop the cucumber, red onion, and parsley. Set aside.
  • In a small bowl, whisk together olive oil, lemon juice, minced garlic, salt, and pepper until well combined.
  • In a large mixing bowl, combine the cooled pasta, avocados, tomatoes, cucumber, red onion, olives, and feta cheese. Pour the dressing over the salad and gently toss to combine.

Serving

  • Cover and refrigerate the salad for at least 30 minutes to allow the flavors to meld. Before serving, give it a quick toss and garnish with fresh parsley.

Storage

  • Store any leftovers in an airtight container in the refrigerator for up to 2 days. For best results, keep the dressing separate if planning to store for longer.
