  • Clean and prep the seafood by peeling and deveining the shrimp, and scrubbing the crab legs and mussels. Cut the corn into quarters and halve the baby potatoes.
  • In a large mixing bowl, toss the corn and potatoes with olive oil, Cajun seasoning, and garlic to ensure even coating.

Assembling the Packets

  • Divide the seafood and vegetable mixture evenly onto large sheets of heavy-duty foil. Add a pat of butter and a squeeze of lemon juice to each pile.
  • Fold the foil around the ingredients, sealing all edges tightly to trap moisture and flavor.

Cooking

  • Preheat the grill to medium-high heat and place the packets on the grill. Cook for 20-25 minutes, turning occasionally, until the seafood is cooked through.
