Ingredients
  

For the Clean Eating Snack Bites

  • 1 cup whole wheat breadcrumbs or lightly processed breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 cup mozzarella cheese cut into small pieces
  • 2 eggs
  • 2 cloves garlic minced
  • 1 tsp Italian herbs
  • 2 tbsp olive oil for drizzling

  • 1 cup light marinara sauce or yogurt based dip optional

Instructions
 

  • Preheat the oven to 375 degrees Fahrenheit and line a baking sheet with parchment paper.
  • In a bowl, mix breadcrumbs, Parmesan cheese, Italian herbs, and minced garlic.
  • Add eggs and stir until the mixture holds together when pressed.
  • Fold in mozzarella pieces until evenly distributed.
  • Shape the mixture into small bite sized balls or patties and place on the baking sheet.
  • Drizzle lightly with olive oil and bake until lightly golden and firm to the touch.
  • Cool slightly and serve warm or at room temperature with a light dip if desired.

Notes

For best texture, reheat leftovers in the oven. These snack bites can be frozen after baking and reheated as needed for quick clean eating snacks.
