Lemon Curd

  • 4 large egg yolks
  • 1 cup granulated sugar
  • 1/2 cup fresh lemon juice
  • 1 tbsp lemon zest
  • 1/2 cup unsalted butter cubed

Tiramisu Layers

  • 2 cups mascarpone cheese
  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 cup lemon curd prepared
  • 1 package ladyfinger cookies
  • 1/2 cup lemon juice

Instructions
 

Preparation

  • In a saucepan, whisk together egg yolks, sugar, lemon juice, and lemon zest over medium heat. Stir constantly until the mixture thickens and coats the back of a spoon. Remove from heat and stir in butter until smooth. Let cool.
  • In a large bowl, beat mascarpone cheese, heavy cream, and powdered sugar with an electric mixer until smooth and creamy. Ensure there are no lumps for a consistent texture.
  • Dip ladyfingers quickly into lemon juice and layer them in a 9x9-inch baking dish. Spread a layer of mascarpone mixture over the ladyfingers, followed by a layer of lemon curd. Repeat layers, finishing with a mascarpone layer.
  • Cover the dish and refrigerate the tiramisu for at least 4 hours, or preferably overnight, to allow layers to set and flavors to meld.
  • Before serving, optionally garnish the top with additional lemon zest or a dusting of powdered sugar for added flair.

Serving

  • Slice the tiramisu into pieces and serve chilled. Enjoy the refreshing combination of creamy mascarpone and tangy lemon curd.
