Ingredients
  

Lemon Soak

  • 1 cup lemon juice freshly squeezed
  • 1/2 cup granulated sugar

Lemon Cream

  • 1 cup mascarpone cheese
  • 1 cup heavy cream
  • Zest of 2 lemons

Assembly

  • 24 ladyfingers
  • Fresh mint leaves for garnish
  • Powdered sugar for dusting

Preparation

  • In a small saucepan, combine lemon juice and sugar. Heat over low until sugar dissolves completely, then let cool.
  • In a large mixing bowl, beat mascarpone cheese until smooth. Add lemon zest and mix well. In a separate bowl, whip heavy cream to soft peaks and fold into mascarpone mixture until combined.

Assembly

  • Dip each ladyfinger into the cooled lemon soak and place a layer in the bottom of a 9x9 inch baking dish. Spread half of the lemon cream over the ladyfingers.
  • Add another layer of soaked ladyfingers and top with remaining lemon cream. Smooth the top with a spatula.
  • Cover and refrigerate for at least 4 hours or overnight to allow the flavors to meld.

Serving

  • Before serving, dust with powdered sugar and garnish with fresh mint leaves for a vibrant presentation.

  • Keep any leftover tiramisu covered in the refrigerator for up to 3 days. The flavors will continue to develop over time.
