Equipment

  • 1 pizza stone preheated
  • 1 Mixing Bowl large
  • 1 Rolling Pin

Ingredients

Pizza Dough

  • 2 1/4 cups all-purpose flour
  • 1 packet 2 1/4 tsp active dry yeast
  • 1 tsp salt
  • 1 tbsp olive oil
  • 3/4 cup warm water

Toppings

  • 1 1/2 cups ricotta cheese
  • 1 lemon thinly sliced
  • 1 tbsp lemon zest
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil leaves for garnish

Instructions

Preparation

  • In a large mixing bowl, combine flour, yeast, and salt. Add olive oil and warm water, stirring until a dough forms. Knead on a floured surface until smooth and elastic. Place in an oiled bowl, cover, and let rise until doubled in size.
  • While the dough rises, prepare your toppings. Thinly slice the lemon and zest it. Mix ricotta cheese with lemon zest, a pinch of salt, and pepper in a small bowl.

Assembling the Pizza

  • Preheat your oven to 475°F (245°C) and place a pizza stone in the oven to heat.
  • Once the dough has risen, punch it down and roll it out on a floured surface to your desired thickness.
  • Spread the ricotta mixture evenly over the dough, leaving a small border around the edge. Arrange lemon slices on top and sprinkle with Parmesan cheese.

Cooking

  • Transfer the pizza to the preheated pizza stone and bake for 10-15 minutes, or until the crust is golden and the cheese is bubbly.
  • Remove the pizza from the oven and let it cool slightly. Garnish with fresh basil leaves before slicing and serving.

Storage

  • Store any leftover pizza in an airtight container in the refrigerator for up to 3 days.
