  • 2 cups ricotta cheese

Preparation

  • Boil the pasta shells according to package instructions until al dente. Drain and set aside, reserving 1 cup of the pasta water.
  • In a large mixing bowl, combine ricotta cheese, lemon zest, and 3/4 cup of Parmesan cheese. Add olive oil, minced garlic, salt, and pepper. Mix until well combined.
  • Add the cooked pasta to the ricotta mixture. Stir to coat the pasta evenly, adding reserved pasta water as needed to achieve the desired consistency.

Baking

  • Set your oven to 375°F (190°C) to preheat while assembling the dish.
  • Transfer the pasta mixture to a greased 9x13-inch baking dish. Sprinkle with the remaining Parmesan cheese on top.
  • Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the top is golden and bubbly.

Serving

  • Remove from the oven and let the pasta bake sit for a few minutes before serving. This allows the flavors to meld together.
  • Serve the pasta bake hot, garnished with fresh herbs if desired. Enjoy this dish with a side salad or garlic bread.
