Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9-inch square baking pan and set aside.
  • In a large mixing bowl, combine 1 cup of flour and 1/4 cup of sugar. Cut in the cubed butter until the mixture resembles coarse crumbs. Press firmly into the prepared pan.
  • Bake the crust in the preheated oven for 15 minutes or until the edges are golden.

Lemon Filling

  • In a bowl, whisk together 1 cup of sugar, 2 tablespoons of flour, and 3 eggs. Add lemon juice and zest, mixing until smooth.

Raspberry Swirl

  • Puree the raspberries with sugar. Optionally strain to remove seeds for a smoother consistency.

Assemble and Bake

  • Pour lemon filling over the warm crust. Drop spoonfuls of raspberry puree over the lemon layer and swirl with a knife.
