  • 2 pounds baby potatoes washed and quartered
  • 1/4 cup fresh parsley chopped
  • 2 tablespoons fresh dill chopped
  • 2 tablespoons fresh chives chopped

Dressing Ingredients

  • 1/4 cup Dijon mustard
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup olive oil
  • Salt and pepper to taste

  • 2 tablespoons capers
  • 1/4 cup sliced olives
  • 1/4 cup sun-dried tomatoes chopped
  • 1/4 cup toasted pine nuts

Instructions
 

Preparation

  • Wash and quarter the baby potatoes. Boil them in a large pot of salted water for about 15 minutes or until tender. Drain and let cool slightly.
  • In a mixing bowl, whisk together Dijon mustard, lemon juice, olive oil, salt, and pepper until well combined and emulsified.
  • In a large serving bowl, combine the cooled potatoes with the dressing. Toss gently to coat the potatoes evenly with the mustard vinaigrette.
  • Add fresh parsley, dill, and chives to the salad. Toss again to distribute the herbs evenly.
  • If using, add capers, sliced olives, sun-dried tomatoes, and toasted pine nuts to the salad. Mix well.

  • Chill the salad in the refrigerator for at least an hour before serving to allow the flavors to meld.
