Ingredients
  

For the Chicken

  • 1 1/2 lb boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 2 tbsp lemon juice fresh
  • 1 tsp lemon zest
  • 2 garlic cloves minced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For the Grain Base

  • 1 cup quinoa or brown rice
  • 2 cups water or broth

For the Vegetables

  • 1 zucchini sliced
  • 1 red bell pepper sliced
  • 1 cup cherry tomatoes halved
  • 2 cups baby spinach

Instructions
 

  • Cook grain according to package instructions and set aside.
  • Marinate chicken with lemon, herbs, oil, salt, and pepper.
  • Cook chicken until golden and fully cooked, then slice.
  • Prepare vegetables and assemble bowls.

Notes

Store dressing separately for best freshness. Bowls keep well for up to 4 days.
