Chicken

Preparation

  • In a large mixing bowl, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Whisk together until well combined.
  • Add the chicken pieces to the bowl, ensuring each piece is coated with the marinade. Cover the bowl and refrigerate for at least 2 hours, or overnight for maximum flavor.

Cooking

  • Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes.
  • Remove the chicken from the marinade and thread onto skewers.
  • Place the skewers on the grill and cook for 15-20 minutes, turning occasionally, until the chicken is cooked through and has a nice char.
  • Preheat your oven to 400°F. Place skewers on a baking sheet and bake for 20-25 minutes, turning halfway through.
