  • 2 boneless skinless chicken breasts
  • 1 cup brown rice
  • 1 can 15 oz black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup cherry tomatoes halved
  • 1 avocado sliced
  • 2 cups romaine lettuce chopped

Marinade

  • 2 tbsp olive oil
  • 2 tbsp lime juice
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions
 

Preparation

  • In a large mixing bowl, combine olive oil, lime juice, cumin, paprika, and minced garlic. Add the chicken breasts and coat them well. Marinate for at least 30 minutes in the refrigerator.
  • In a medium saucepan, bring 2 cups of water to a boil. Add brown rice, reduce heat, cover, and simmer for 20 minutes or until rice is tender.
  • In a small saucepan, heat the black beans over medium heat, seasoning with salt and pepper, until warmed through.

Cooking

  • Preheat a grill pan over medium-high heat. Remove chicken from marinade and grill for 6-7 minutes on each side, or until cooked through. Let rest before slicing.
  • Divide the cooked rice among 4 bowls. Top with sliced chicken, black beans, corn, cherry tomatoes, avocado slices, and chopped lettuce.

Serving

  • Garnish each bowl with cilantro and a lime wedge. Serve immediately for the freshest taste.
