  • 4 ears fresh corn
  • 2 cups cherry tomatoes halved
  • 12 oz pasta such as fusilli or farfalle
  • 1/2 cup creamy dressing such as ranch or Caesar
  • 1/4 cup fresh basil chopped
  • Salt and pepper to taste

  • 1/2 cup crumbled feta cheese
  • 1 avocado diced
  • 1/4 cup toasted pine nuts

Preparation

  • Preheat your grill to medium-high heat. Husk the corn and remove all silk. Brush the corn with olive oil and season with salt and pepper.
  • Place the corn on the grill and cook for about 10 minutes, turning occasionally, until charred and tender. Allow to cool slightly before cutting the kernels off the cob.
  • In a large pot of salted boiling water, cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  • In a large mixing bowl, combine the grilled corn kernels, cooked pasta, halved cherry tomatoes, and chopped basil.
  • Pour the creamy dressing over the salad ingredients and toss gently to coat evenly. Season with additional salt and pepper to taste.
  • If using, fold in crumbled feta cheese, diced avocado, and toasted pine nuts.

Serving

  • Transfer the salad to a serving dish and serve immediately. Enjoy as a side dish or a light main course.

  • Refrigerate any leftovers in an airtight container for up to 2 days. Stir well before serving again.
