  • 1 lb cheese tortellini
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella balls
  • 1/2 cup black olives sliced
  • 1/2 cup pesto sauce

Optional Add-ins

  • 1/4 cup roasted red peppers chopped
  • 1/4 cup artichoke hearts chopped
  • 1/4 cup Parmesan cheese grated

Preparation

  • Bring a large pot of salted water to a boil. Add tortellini and cook according to package instructions until al dente. Drain and set aside to cool slightly.
  • While the tortellini is cooking, halve the cherry tomatoes, slice the black olives, and chop any additional vegetables you are using.
  • In a large mixing bowl, combine cooked tortellini, cherry tomatoes, mozzarella balls, and black olives. Toss gently to mix.
  • Add pesto sauce to the bowl and toss until all ingredients are evenly coated. Adjust seasoning with salt and pepper if needed.
  • For best results, chill the salad for at least an hour before serving to allow the flavors to meld together.
  • Serve the salad chilled as a side dish or a main course. Garnish with fresh basil leaves if desired.
  • Store any leftovers in an airtight container in the refrigerator for up to 3 days. Stir well before serving again to redistribute the dressing.
