Ingredients
  

For the Chicken

  • 4 boneless skinless chicken breasts
  • 2 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp Italian seasoning
  • 1/2 tsp garlic powder

For the Caramelized Onions

  • 2 yellow onions thinly sliced
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • 1/2 tsp dried oregano
  • 1/4 tsp paprika

Instructions
 

  • Preheat the oven to 400 degrees Fahrenheit and lightly grease a baking dish with olive oil.
  • Toss the sliced onions with olive oil, salt, oregano, and paprika until evenly coated.
  • Spread the onions evenly in the baking dish and place the chicken breasts on top.
  • Drizzle the chicken with olive oil and season with salt, black pepper, Italian seasoning, and garlic powder.
  • Bake uncovered until the chicken is fully cooked and the onions are soft and lightly caramelized.
  • Optional: Broil briefly at the end to deepen color.
  • Let rest for a few minutes before serving.

Notes

Chicken thighs can be substituted for breasts for extra juiciness. Leftovers can be stored in the refrigerator for up to three days.
